  • Green Onions are available year-round.
  • Have been cultivated for over 5000 years.
  • As early as the sixth century B.C., a medical treatise, the Charaka Sanhita, celebrates the onion as medicine, a diuretic, good for digestion, the heart, the eyes and the joints.
  • A single, 12-gram green onion stalk contains nearly 20 micrograms of vitamin K and 1.6 milligrams of vitamin C.
  • Being a leafy-greens, scallions naturally carry more plant-derived antioxidants, and dietary fiber than their fellow bulb members.
  • The chromium in onions assists in regulating blood sugar. The sulfur in onions helps lower blood sugar by triggering increased insulin production.
  • Slicing onions makes you cry because when you cut into it, the onion produces a sulfur-based gas.
