Spicy Onion & Pepper Relish
/Ingredients:
1 onion, finely diced
1 chile pepper, seeds removed and minced, or ½ bell pepper, finely diced (the latter option will result in a less spicy relish)
1 Tbs. freshly squeezed lemon juice
1 tsp. hot smoked paprika (or ¾ tsp. smoked paprika + ¼ tsp. cayenne pepper)*
¼ tsp. salt (or to taste)
Procedure:
Combine all ingredients in a small bowl and mix well. Allow to stand for 30 minutes at room temperature. Use to top burgers, hot dogs, or veggie burgers. Also makes a good pizza topping. Refrigerate any leftovers in an air-tight container.
*Note: For less heat, use 1 tsp. smoked paprika (with no cayenne pepper). For more heat, add additional cayenne pepper. If you don’t have smoked paprika, you can substitute regular paprika, although this will give the relish a different flavor.
