Grilled Peaches with Balsamic Reduction
/Ingredients:
3 peaches, halved and pitted
3 Tbs. brown sugar
3/4 c. balsamic vinegar
3 oz. crumbled feta cheese (optional)
Procedure:
In a small saucepan, stir together the brown sugar and balsamic vinegar and bring to a simmer over medium heat. Simmer until liquid has reduced by about one half, stirring occasionally. Remove from heat and set aside.
Preheat grill to medium-high and lightly oil the grill plate. When hot, place peaches on grill plate, cut side down, and cook for about 5 minutes, or until starting to caramelize. Turn peaches over and brush the tops with the balsamic vinegar reduction; cook for another two minutes. Remove to a serving dish and sprinkle with feta cheese (if using).
Note: You can also bake these peaches in the oven instead of grilling. Preheat oven to 375°F. Place peaches on a baking dish, cut side up. Bake for 15 minutes, then remove and brush tops with balsamic reduction. Bake for another 15 minutes or until peaches are tender and lightly caramelized.
Remove from oven and sprinkle with feta cheese (if using).
