Rice with Brussel Sprouts
/Ingredients
14 Brussels sprouts washed and cut in half
1 cup of rice previously soaked and styled
1 bunch chives, chopped
1 clove garlic, minced
½ bunch of chopped cilantro
2 ½ cups of broth of your choice (chicken or vegetable broth)
½ cup flaked or shredded almonds
4 cd of oil of your preference
1cd of salt
Juice of a lemon and the zest of its peel
Instructions
In a large frying pan, sauté the minced garlic, chives, and the Brussels sprout halves with 2 tablespoons of oil for 3 minutes over low heat. Add the remaining oil and a cup of rice, stir and fry for a few more minutes. Once you see that the rice has a different color add the almonds and stir again. Add the broth, salt, coriander, lemon juice and its zest. Now cover and cook for 15 minutes or until your rice is ready.
